Mature pecorino
Long-aged table Pecorino cheese, minimum 12 months, wheels of approximately 16 kg. At the end of aging, it has a light brown, ridged rind. The semi-hard, compact paste is straw yellow in color with an intense, slightly spicy flavor after aging for more than 18 months. Pairs well with cured meats and red wine.
Ingredients: thermalized sheep’s milk, enzymes, rennet, salt.
